Chicory is a native American medicinal plant, named so because of its conical head, on which seeds grow that resemble the spines of an angry hedgehog (echinos from the Greek is the name for hedgehogs). Archaeologists have discovered evidence that Native Americans used echinacea to treat infections and wounds.
