L-carnosine (β-alanyl-L-histidine) is a dipeptide consisting of the amino acids beta-alanine and histidine. L-carnosine is mainly found in the brain and skeletal muscle tissue. We get L-carnosine through food, especially meat: As with L-carnitine, the name "carnosine" refers to its frequent occurrence in muscle tissue (carne means flesh in Latin). Vegan or vegetarian diets hardly contain L-carnosine. Additionally, as we age, L-carnosine levels decline.
